Roux Scholarship finalist, Curtis Tonge, joins Andrew Sheridan’s Dishes as head chef

Roux Scholarship finalist, Curtis Tonge has been appointed as the new head chef of Andrew Sheridan’s restaurant Dishes in North Wales, after leaving the two AA Rosette-holding Manifest in Liverpool. A 2021 Roux Scholarship finalist, he brings with him a wealth of experience. Curtis worked at the one-Michelin-starred Northcote and the fine-dining restaurant at the Chester Grosvenor Hotel.
Curtis, a dad-of-two from Chester, is looking forward to elevating the menu at Dishes, which Michelin praised for its ‘roll-call of terrific Welsh ingredients.’ “I’m absolutely delighted to be joining ORG as the new head chef of Dishes. It’s a brilliant opportunity for me to lead a team and show what I can do,” comments Curtis. Andrew Sheridan added: “To get Curtis onboard is a real coup for us. He’s an immensely talented chef bringing loads of experience and enthusiasm to his new role.”

‘Dishes’ is just one of a portfolio of restaurants owned by the Open Restaurant Group (ORG). Spearheaded by Andrew and husband and wife Sam and Emma Morgan, ORG includes the three AA Rosette 8 by Andrew Sheridan in Liverpool and OXA in The Wirral.
Recently, the group acquired Pensons, the farm-to-fork restaurant with rooms, on the Netherwood Estate in rural Worcestershire. Other venues include The Bracebridge, a lakeside pub and restaurant in Sutton Coldfield, Black & Green, and Cofton on the Green, in Barnt Green, Worcestershire.
